Corn Griddle Cakes ... with honey butter.

A few weeks ago, I started to research how to make my own English muffins. I figured that anything that I love as much as those suckers, I should at least attempt to make once. So, I picked up some cornmeal and... since then it's just been sitting in my cabinet. Bummer.

But, this past weekend I had a small Christmas party at my apartment and someone who knows me all to well ... gave me bacon as a hostess gift. SERIOUSLY. So, when I woke up on Sunday morning all I could think about was that bacon, a giant endless mug of coffee, and <insert carb with butter>.

After a few minutes of thinking, I settled on making corn griddle cakes. Essentially, pancakes but like cornbread... Basically. Some quick googling led me to recipes that ranged from 5 ingredients to 25.
I knew there would be a difference obviously, but I was too hungry to wait so I went with the quick and dirty approach.

Since these suckers were so easy, I whipped up some honey butter to slather on them. In the event you are starting to be impressed, stop. I literally just softened some butter in the microwave and mashed it
with some honey. The impressive part is that my friend Meghan's dad MADE the honey. Or maybe I should say he monitored and cared for the bees that made the honey? Either way... It was a great addition.

End result? Not bad. The grilled cakes were a bit bland. I need to take another pass at these suckers. I'll do more research next time and I can imagine that I'll be adding ingredients ... Like sugar for one.

So here's how it goes down.
(Step 1) In a bowl, combine the cornmeal, cinnamon, baking powder, and salt.
(Step 2) add in a whisked slash scrambled egg and the cup of water.

(Step 3) At this point, the recipe that I was following essentially said you could add more water until the consistency was "soupy" but not too "watery". I had come to the conclusion that these cakes were going to have zero flavor .... So I added milk.

(Step 4) Spoon the mix onto a hot griddle that has melted butter or cooking spray on it. You are crazy to use cooking spray, but maybe you are making healthier decisions than I am.
(Step 5) Griddle cakes cook just like pancakes ... so watch for the edges to brown a bit or the bubbles ... whatever method you use to cook pancakes.
Now.... Serve with love. and butter. and coffee. and honey.

Shopping list
2 cups of cornmeal
1 cup of water
1 egg
2 t of baking powder
1 t salt
1 T cinnamon
Approx 1 cup milk
