Almond Blueberry Scones

In the effort to get caught up previous recipes ... here is another one. Almond Blueberry Scones.

I made these on my first vacation day in December for some of the girls that I work with. See they were all still working hard, while I was wearing leggings and going to a spin class. I literally wouldn't be able to do my job without them so the obvious next step is a batch of "thank you scones". Right?

Scones are my go-to baked good for sharing. They travel really well, are easily customizable for the season or occasion, and are already portioned out for serving sizes. For reference, here are the other types of scones I've made:


These scones were pretty amazing although I think I could have used a bit more flour in the mix. These babies got a bit flat during the baking process. So while they still tasted delicious, they did not have the volume of previous attempts. Oddly enough, the last time I baked for coworkers I made blueberry almond loaf bites... so the ingredients were crazy similar. Whoops.

Despite being January, there has been essentially zero snow in Boston this year. By this time last year I had gone cross-country skiing at least 3 times. This year = zero. But tonight... it is snowing ... even if just for a few hours. Whenever it snows, you should almost always eat baked cheese and pasta. And wear leggings. And watch Friends on Netflix.

I came across this recipe via a Facebook ad a few days ago. Essentially this is the only thing of value that Facebook has really ever brought me... and it's good. I've always been a fan of roasted cauliflower but was really intrigued by how that would work with lasagna. The soup was a winner and so was the faux fried rice... and so is the lasagna.

Welcome to 2015

I'm currently soaking in my last night of vacation before returning to work. I've had just about two weeks off ... and I'm honestly not sure what I really did during that time. There was just a little bit of everything and a lot of nothing except elastic pants.

I had several other things on my to-do list that I just never got to... but that's alright. I'll get to them probably never. Funny story... I have used the same notebook for keeping my to-do lists the entire time I've lived in the North End. It's pretty intriguing to flip the pages back and see what I was making/doing in 2011 ... while at the same time seeing that it took me several lists to finally clean off my fire escape. I tend to make a new list (or page) for each weekend.
