Lemon Sponge Cups

The last chapter in our Downton premiere menu is fittingly ... dessert.

Just to recap the PREMIERE episode meal, we started off with some gougeres as an appetizer then cut ourselves a slice of sausage and kale dinner tart. And because the dinner tart called for white wine, we also drank some white wine. Our dessert is a lemon sponge cup ... which sounds perhaps a bit boring... but it's rather quite great. You end up with this crazy delicate and soft sponge cake on top ... and a sweet custard on the bottom. I hesitate to even write the word "custard" because this now means I can never make this for my mom.

When I was looking for some dessert ideas, I came across a few things that I thought would be good. Then, I saw this recipe for lemon sponge cups and I was convinced. I was really drawn to how simple this whole dessert was from ingredients to preparation. I can almost guarantee that you already have everything in your kitchen right now. In fact, you probably have everything for the entire Downton meal in your fridge... except maybe the sausage or the kale.

Guys, I saw this recipe and practically fell in love. Like I normally do when I see a hot cup of coffee in an adorable old mug. Not a new mug, but an old mug.

It is simple and a kind of a bit rustic. Kale makes me feel rustic, except I guess in this kale caesar salad. I think people that say they don't like kale are the same people that say they dislike brussel sprouts or asparagus. You can say you don't like these things, but please tell me you have tried them at least 5 different ways. If you need 5 ways, let me know.

I get pretty excited when I'm picking recipes for Downton Abbey dinners. This year for Christmas my family actually gave me a cookbook just for this events. I'm not quite sure what a "dinner tart" is but I don't know that Ms. Pattmore made them in the early 20th century. And if she did, she most certainly didn't have a food processor to quickly whip up the crust - which by the way might be the best crust I've ever mad. It was perfect.

And... we are back to Downton Abbey season!

I feel oddly cautious about burning myself out like I did last year. A three course meal is a fair bit of work for each Sunday evening - obviously, it's not terrible work ... but work none the less. There were some great hits last year. Kerrianne still talks about those deviled eggs like angels made them.

So when I was thinking about this premiere episode I initially thought I would just make a dinner and a dessert. But this morning, I stumbled upon a recipe for gougeres and was shocked to realize that I had all the ingredients already on hand. By the way, gougeres are essentially just another way of saying cheese puffs.

I just ate about 6 peppermint Hershey kisses. Before that, I ate a rice cake smeared with nutella. My chocolate sweet tooth is rearing it's ugly head right now.

I think it's really easy to make a chocolate dessert or maybe something that is like that. Chocolate cake, apple charlotte,  strawberry shortcake .... all great desserts. But, not in line with the "healthier" direction that I received from Baby Sister for this dinner.

The meringue nest recipe was actually something I tagged way back in the beginning of Downton Abbey dinners. But, it slowly got passed by week after week in favor of something else amazing. This week was a great week for it to finally appear on the menu.

In the past when I've been documenting our Downton Abbey dinners I've tried to stick with writing in the order that we ate.

But this week, we started eating with split pea soup. 

It's not exciting. It's not sexy. 

Split pea soup is great but it's not a conversation starter. It's a sidebar. Nobody says "MAN, have you heard about that place's split pea soup?" Nope, instead people talk about rolls, centerpieces, napkins, and bathroom decor. 

But I don't want to take away from this soup. It's not bad, it just belongs with a meal ... not a standalone. Thankfully in this case, it had a meal and two happy faces ready to eat it. Additionally, it was crazy easy to make. As you can see in the ingredients list, there are 7 ingredients. That's simple.

Then there was the time that it was the season finale of Downton Abbey.

It had been a few weeks since I attempted a full three course meal and so the finale was a great opportunity to get back in the swing of it. Baby Sister threw a bit of a wrinkle in the plans with the requests for a slightly healthier meal. I haven't exactly been making terrible things for us to eat but an asparagus cheese tart isn't the best thing on the earth. So I appreciated the challenge.

My original plan was for a 4 course meal that would kick off with oysters. But, nobody told all the stores in the North End that I wanted to do that. So everyone was sold out of oysters. Whamo. Moving on and down to three courses.
Not terrible. Oh, and we had champagne. I used to not have a taste for the bubbles but now I love them. I'm not a huge drinker but I'll never turn down a glass of bubbles.

I'm fully aware that they didn't have nutella in Downton Abbey days.

I almost care about historical accuracy but then I realize I've been nearly nutella free since before Thanksgiving. And, I really wanted some nutella. I also really wanted to eat more of the vanilla ice cream that was in my freezer (leftovers from the Apple Charlotte).

All those things considered, I elected to make Nutella Bread Pudding. And let me tell you, as soon as I licked the knife clean... I knew I had made the right decision. That stuff is good. 


For this Downton Dinner, we kicked it off with the asparagus parmesan tart then had some Irish stew. It was a bit of a rich meal for sure. I figured it would make sense to try and make this a lighter version of bread pudding. A little bit of research meant using light cream as opposed to heavy cream and using french bread over some other types. Since I love buying fresh bread, I was on board with this. Plus, a French Baguette is only $2 at Bricco Panetteria.

Despite the anxiety that comes with whisking hot milk / cream into egg ... this was a really easy dessert. Great for making a bit in advance and great for ramekins. Oh, and we skipped drinks this time in part because we were just a little full and tired. But let it be known that we had some Irish Whiskey on hand should we have pushed forward with cocktails.

End result? This was great and super delicious. I could have used a bit more of the custard mixture but it all worked out just fine honestly. 

Here's how it goes.

(Step 1) Preheat the oven to 350°F.  Grease your baking dish or dishes in preparation.

(Step 2) Cut the baguettes in half and make 6 sandwiches with the bread and nutella. Cut each sandwich into smaller pieces. Use your judgement on size, but not too small. Pile the sandwich pieces into the prepared baking dish.
(Step 3) In a small saucepan, combine the cream, salt, and vanilla and cook over medium heat until warm.

(Step 4) In a large bowl, whisk together the sugar and eggs. Slowly add the cream mixture, stirring constantly to make sure the eggs do not cook. Anxiety central.

(Step 5) Pour the mixture over the bread and cover the dish with aluminum foil.

(Step 6) Bake on the center rack of the oven for 30 to 40 minutes, removing the foil after about 20 minutes. The finished pudding will be golden brown on top.

(Step 7) You can either eat in the ramekins or remove to a slightly different dish. As you might be able to tell from the pictures, I removed from the ramekins and topped with some vanilla ice cream (leftovers from the Apple Charlotte!).

Shopping List (for 2 people)

6 inches (or so) of baguette for each person = 1/2 a baguette total for 2
1/2 cups nutella
3/4 cup light cream
pinch of salt
1/2 teaspoon vanilla extract
1/3 cup sugar
1 large eggs

Irish Beef Stew

So, when I decided to make Irish Stew I honestly wondered what was different about this as compared to my previous beef stew. 

But I didn't really think too much about it. I had beef stew to make and a long walk to take by the harbor. Must get to work. 

I'm of Irish heritage and perhaps it's a bit embarrassing that I don't know much more about the cuisine of Ireland. I have been to Ireland a few times and pretty sure that what I ate was not indicative of traditional cuisine. I vividly remember crackers, scones, and a phenomenal grilled cheese.

What I feel like I know about Irish food is there are potatoes and there was a famine.  So, when I saw that this stew called for a bunch of them I felt like I was being authentic. Crisis averted. I also figured that the broth would be a bit thinner due to the famine. But, this is 2013 and I was going to use a slow cooker ... so who knew how this was going to end up.

One of the great parts of about these Downton Abbey meals is that I'm pushing myself to make appetizers and desserts. I mean, let's be real, I'm just one person here ... and when cooking dinner for myself there is no need for an appetizer or dessert.

I can usually be found demolishing half a loaf of bread that is meant for croutons or fiendishly cutting off hunks of cheese while I dice vegetables.

Well, this week's Downton Abbey episode was around women's suffrage and the Irish Revolution. I'm not sure that this appetizer really fits either of those categories. The category it does fit is that I bought the asparagus last week for use with the roasted cod but never used it. So, in the spirit of using what you have .... we have an asparagus appetizer.

Fancy Shmancy Almond Chocolate Cake

A couple years ago, there was a revolution in our family.

It pretty much started and ended around birthday cakes. Maybe the word revolution is a bit much but essentially, my sister and I have made every attempt going forward to make all the birthday cakes ... as opposed to buying them. Not only are they baked but they are decorated with a theme appropriate for the birthday celebrant. 

I'm not really allowed to decorate the cakes. I lack a certain artistic talent that only my sister processes. I am however allowed to participate in the cake making... and we only make vanilla cakes. Or Red Velvet. Unless it is my Mom's birthday ... in which case she can have chocolate.

I'm just not a lover of chocolate cake. That being said, if you want to make a chocolate cake.... I will eat it. Especially if I get to wear leggings when I do it. Or we are curled up on my couch. 

Roasted Cod with Tomato Pancetta "Stew"

Based on the previews for this week's Downton Abbey episode, I felt like we needed to prepare for a wedding. I'm not going to spoiler the episode for you but I will say Edith is still living the life of a middle child.

I spent a lot of time searching for "the right" main course. I had visions of a seared fish for some reason and couldn't quite get that out of my head. I did some googling for "wedding halibut dish" and "Downton Wedding" and "winter wedding meal". In the true spirit of a party meal, what I ended up cooking wasn't that close to what I had planned. 

I stumbled upon a reference to a Thomas Keller seared halibut on the interwebs which prompted me to reopen one of my favorite cookbooks, Ad Hoc at Home . The asparagus tomato bacon stew seemed like a perfect base for the halibut. I can't resist bacon or San Marzano tomatoes. 

Truffled Mushroom Tartlets

Ah, it's another week of Downton Abbey under our belts and that means another 3 course meal.

So here's what the menu was for this episode:
- mushroom tartlets
- roasted cod with tomato pancetta stew

I'm not sure how much longer I can keep this charade up honestly... however, it has made me realize how challenging it is to be a chef. And, let's be real... I'm cooking for 2. 

That being said, each of the courses I made for this week was easy on it's own. These little mushroom tartlets are a great little secret. Just like every week I tell Baby Sister that she only has to eat one ... and then we proceed to eat almost all of them. I look forward to impressing some friends or enemies with them some time in the future.

Welcome to the last chapter in the premiere episode of Downton Abbey ... Season 3 of course.

By this point in the evening, we had eaten some delightful deviled eggs and some Shepherd's Pie. And nearly an entire bottle of champagne.  

We had also continued our hobby of impersonating some of the cast when we took quick breaks for drinks, dishes or more food. Baby Sister does a great impersonation of Daisy and several other characters as well. She always knows how to make me laugh on pretty much any day ... but doing impersonations really gets a giggle from me. Me on the other hand? No impersonation skill. I just can't channel my inner Brit.... unless it is the one scene when Sir Anthony Strallan spits out the Raspberry Pudding dessert because she put salt on top instead of sugar. That's the only one I can do... besides peel apples.

About this time last year, I went home from work sick one day. I ended up on my couch for about 8 hours ... which was enough time to stumble upon my first episode of Downton Abbey ... and then promptly watch the entire season.

It was a phenomenal accident that has resulted in at least one occasion where I binge watched several episodes in a row. Most recently post Sisterly Christmas party, Baby Sister and I watched a cool 10 HOURS of Downton Abbey while dining on corn griddle cakes with honey butter. I'm pretty sure that for lunch that day we ate a box of Mac and Cheese ... but I can't be sure since I was clearly in a pretty serious tv coma.

Well, ever since this summer I've been impatiently waiting for Season 3 to debut to the US. So, it was no shock that I felt it required a whole special evening and coordinated menu to match the occasion. I had seen a link on Huffington Post for some sample menus and knew I was going to need more than one course.

Here is what I ended up with:
- Shepherd's Pie for a main course
- Apple Charlotte for dessert
Since that ended up being three new recipes, it'll be three whole new posts as well. Too much too document ... and I'm going to be doing it all again with new recipes for episode two this week.

savory shiitake asparagus and artichoke risotto

Sometimes, life is about patiently stirring some rice in a skillet and making risotto. 

Sometimes, life is about realizing that your "collection" of cotton sundresses that are totes perfect for New England are "totes not perfect" for your weekend in Miami. Blurg.

That is the reality that I'm coming to at 10:30 on a Monday night. I've had weeks to prepare for this but instead I was making soup, seeing seals, and I'm not sure what else. Probably watching Downton Abbey. I do that alot.

So, the downside for tonight is the fresh hell that I'm so unprepared for my exciting and awesome weekend away. Even if I skip going to yoga tomorrow night, I won't be able to make it anywhere for anything. Double blurg.

The upsides? I'm three days away from pillow talk with some besties and I made a delicious risotto on a weeknight. I almost made this risotto twice this weekend but just keep putting it off and I'm glad I did. I savored this creamy delight tonight while I guilty watched "The Bachelor". 

I didn't take many / any pictures of this process.... except of the amazing onions getting all warmed up with the butter. They were just too pretty for words. When you put real butter on diced onions you just know it's going to be a good dish.

(Step 1) Bring broth and water to a boil in a pot. Add asparagus and cook, uncovered, until crisp-tender, 3 to 4 minutes. Theoretically you should then transfer asparagus with a slotted spoon to a large bowl of ice and cold water to stop cooking, then drain and pat dry. That's the plan. It seemed like a lot of work to me, so I put transfered them to a bowl. Easy peasy. But, keep the broth at a bare simmer. Don't get rid of all that hard work.

(Step 2) Heat oil with in a pan over moderately high heat and saute mushrooms, stirring occasionally, until browned, about 4 minutes. I just tossed them in on top of the asparagus. All the business in a bowl, you know how I do.

(Step 3) Cook onion in 2 tablespoons butter in saucepan over moderate heat, stirring, until softened, about 3 minutes. Then pop the rice in the pan and cook, stirring, 1 minute. 

(Step 4) This is when you start to do some serious work / stiring / nothing else in your kitchen. Ladle in 1 cup simmering broth and cook at a strong simmer, stirring, until absorbed, about 2 minutes. Continue simmering and adding broth, about 1/2 cup at a time, stirring frequently and letting each addition be absorbed before adding next, until rice is just tender and looks creamy, 18 to 20 minutes. Since I never measure anything.... I just kept going with the broth until I liked the consistency. I ended up having to add a little water to the "asparagus broth mixture" from earlier. No biggie. Also, you will want to save a bit of leftover broth for thinning in a bit.

(Step 5) Almost eating time I promise. Remove from the pan from the heat and stir in 1/2 cup cheese, remaining tablespoon butter, and salt and pepper to taste. I honestly didn't need any salt because the broth was rather salty. Gently stir in asparagus, artichokes and mushrooms, then cover pan and let stand 1 minute. Since I used canned artichokes, I made just to try and really mix those in so they wouldn't be like cool or anything. I'm weird. It doesn't even seem like that's really possible since they are so thin. 

(Step 6) Now you can eat! If desired, thin risotto with some of remaining broth. Scoop some of this business in a bowl and top with grated parmesan. You won't regret it.  


Shopping List
5 cups chicken broth
1 cup water
1 bunch of asparagus, trimmed and cut into 1/4 inch thick slices, leaving tips 1 1/2 inches long
1 tablespoon olive oil
1/2 stick (1/4 cup) unsalted butter
3/4 pound fresh shiitake mushrooms, stems discarded and caps cut into 1/4 inch thick slices
3 artichoke hearts from a can (go ahead judge me)
1 medium onion, diced
1 1/2 cups Arborio rice
1/2 cup finely grated Parmigiano-Reggiano

Weekend Recap

Yikes. How did it get to be February? I'm not totally sure.

I did realize today that since today is the 5th that means my half-marathon is a mere three weeks away. I guess that means I should be booking a hotel room and perhaps planing some sort of outfit. Yep, that's right. I said outfit.

This weekend was pretty relaxing. It was filled with luxurious lady time (manicures and pedicures), apartment touch-ups, and amazing sunny days. I only ran once but that was due to a pesky stubbed toe I blessed myself with on Friday morning. Before you label me a baby, I'd invite you to check out my swollen and multi-colored toe... well, not really I don't want anyone looking at my feet.

So, what did the weekend look like? I'll show you.

Friday. Celebratory dinner at Neptune Oyster with baby sister. What are we celebrating? She snagged herself a new apartment. So, yes. She'll be moving off our street but she'll just be moving a mere minute away. I'll cope just fine. We dominated a serious amount of oysters including ones from my favorite places like Damariscotta, Maine (Pemaquid) and Duxbury, MA (Island Creek). Remember how much I love Maine (here, here, and here)? So good. Well, the evening ended with season two of Downton Abbey on my couch. Perfection.

Saturday. You know that song from Sound of Music "My favorite things"? Well that was pretty much Saturday. Breakfast at Theo's Cozy Corner with my mom and sister. Followed by perusing Polcari's Coffee and pedicures at the new place in the 'hood.  If that wasn't enough, I skipped over to Back Bay and got a manicure and latte with a solid bestie Lauren. 

But I didn't take pictures of those things.... instead I snapped a shot of my Saturday night. A luxurious bath complete with wine, candles, Amazon ... and nachos. That's right. I eat nachos in the tub.
Sunday. I hope you like pictures of Boston Harbor because that's what I'm going to offer you. When I stumble across something that I love an insane amount I can't decide whether to share it or keep it all to myself. That's how I feel about the Boston Harbor Walk. It's bananas awesome .... especially on a day like today. So incredible that I did it twice. Once in the morning with Baby Sister and once on an afternoon run. Don't worry, both times I visited my friends the seals at the Aquarium.

It's a good weekend like this that make 5 days at a desk worthwhile. So in repayment for this weekend, I guess I'll be doing just that. Sitting at my desk.

This is actually the second time I've tried to write this post. 

The first time I sounded like a whiner. I wanted to tell you about falling during my run on Sunday, how I don't have hot water in my apartment, and how I've been sick for the past 2 days. I did also want to tell you that I took a fabulous run (my longest yet) and saw the seals at the aquarium.

But, in actuality all I really want to talk about is the following:
(1) I watched 7 hrs of Downton Abbey yesterday and I love it.
(2) I discovered a hole in my uggs.

I'd heard a lot about Downton Abbey but hadn't really gotten around to watching it. Well, I went home sick from work yesterday late morning and it seemed like the perfect activity. If you are at all a fan of Pride and Prejudice, you will love love love it. But, I've heard that its getting more positive feedback than just from P&P fans. It took me about 7 hrs to polish off the first season, and I'm super pumped to get settled in my nest of pillows for Season Two. I plan on filling my glass with grape gatorade and snuggling in nice and tight. I just need to know what happens with Mary and Matthew, the fighting between the sisters, and does Mr. Bates ever kiss Anna?!?! Seriously. I needs to know.

I also need to know what to do about my Uggs. I feel like I've taken great care of them for the past 4.5 years (wow, I didn't realize it'd been that long) and I'm bummed that I've got a hole in the toe. I guess I have an over-active hammer toe that just really wants to see the light of day? 

Instead, I'm going to try and have a relatively productive afternoon before I return to my couch immediately after work. The goal for tomorrow is to look healthier because apparently no amount of bronzer does that for me. I learned this today when someone told me that I still looked sick. Helpful right?
